It grows in the medium and high hills of Modena, also because Grasparossa has less difficulty in maturing than other varieties: its land of choice is Castelvetro. The Grasparossa name is given by the color of the stalk. In the province of Reggio Emilia, the mass production is concentrated in the mount of Scandiano and Canossa. It is harvested in the first half of October. The result is a ruby-colored Lambrusco with marked purple hues. The aromas of flowers and red fruit become more pronounced than those of Sorbara. The body becomes fuller, acidity and tannicity increase, remaining well-balanced.
